The grapes are vinified separately.
After a total destemming to avoid any herbaceous note or any hard tannin, the grapes are gravity-fed in small cement vats. They are cooled as soon as they are brewed to delay the start of fermentation. The fruitiness is thus preserved and the color is more dense. Each vat is drawn once or twice a day and then oxygenated by reassembly. Temperatures are controlled at 25 ° -30 ° C. The vatting is long and ranges from 3 to 4 weeks to promote concentration. Aged for one year in oak barrel.
The wine is powerful and warm with aromas of black fruits and candied fruit. It begins to express its complexity, with notes of flint, leather and spices (cinnamon, clove, musk). Its length in the mouth is exceptional and its structure particularly coated. This combination of ripe fruit, sweet spices, this dense and silky structure make the Camille Cayran selection a great Châteauneuf today.
