Vallisto Extremo Tannat
Vallisto Extremo is the pet project of Francisco Lavaque producing classical wines via natural methods from old vines, for this Tannat over a hundred years old. Fermented and aged for twelve months in concrete tanks with no wood used.
Purple opaque in colour with ruby highlights, so no surpirse that it’s big and juicy on entry. Not a “fruit bomb” as some Salta wines can be, more of a European balanced savoury style.

This wine, sourced from grapes grown in vineyards planted more than 100 years ago in Quebrada de San Luis, Cafayate, honors the determination of our forefathers. Our mission is to protect this historical legacy and express our identity through such special fruit.

These Tannat grapes were planted more than 100 years ago and trained to parrales, or overhead pergolas. They grow on soils with intrusive and decomposed granite and metamorphic rocks.

De-stemming and crushing. Fermentation in concrete tanks with indigenous yeasts. Minimal SO 2 use. No added nutrients, enzymes or acids.
